Easy Christmas Breakfast Rollups

Ingredients:
3 pkg. Crescent rolls 3 Fuji or Cameo apples chopped
1 block of cream cheese 1 pkg. Maple sausage (not links)
Black pepper

Brown sausage, add apples and let them cook down. Mix sausage/apple mixture with cream cheese and pepper to taste in a bowl. Place one spoonful of mixture on each crescent roll. Roll up and put on non greased cookie sheet. Bake at 375° for 15 or until golden brown.
Makes 24 big rollups.



Pumpkin Waffles
 

Combine:

2 cups flour          1 tsp. cinnamon
¼ cup sugar 1 TBS. baking powder
½ tsp. salt ½ C. pumpkin
2 eggs 4 TBS. butter

Just mix together and cook in waffle iron.



Apple Walnut Muffins
 

Ingredients:
2 eggs ¼ tsp. baking soda
1 C. flour ¼ tsp. ground cinnamon
1 C. oat flour ¼ tsp. ground ginger
¼ tsp salt 1/3 cup chopped walnuts
¼ tsp nutmeg 2/3 cup buttermilk
2 TBS. oat bran ¼ tsp ground allspice
1 cup plus 2 TBS frozen thawed apple juice concentrate
2 small granny smith apples (peeled, cored and chopped)

Mix together flour, soda, salt and spices. Then separately mix eggs, juice and buttermilk. Add oat bran to egg mix. Then add egg mix to flour mix. Don’t over mix. Gently stir in apples and walnuts.

Fill muffin tins ¾ full (either greased or use paper cup liners).

Bake at 375° for 25 minutes.
